Review: *** $ Indomita Cantus Sauvignon Blanc, Casablanca Valley, Chile, 2008 - BEST VALUE

Original Tasting and Review:

By way of background: For some reason, I'm drawn to the sauvignon blanc portion of the cellar this midwinter day.  Good experiences with a Kim Crawford have let me to another 2008 vintage from the other side of the world, an Indomita Cantus Sauvignon Blanc from Casablanca Valley, Chile. Just like the Kim Crawford, the Cantus is finished at exactly 13% alcohol.

In the glass: Cantus Sauvignon Blanc shows as vanilla tinged with yellow in the glass.

On the nose: Poured cool with no decant and swirled vigorously, this Chilean sauvignon blanc shows clean sweet fruits of apple, pear and even peach on the nose. Just a hint of the grass and slate you might expect from "classical" sauvignon blancs.

On the palate: The first element on the palate is tangy, unsweetened-pineapple on the tongue, followed by bright, sweet, citrus-like acids to the roof of your mouth.  

And the wrap-up: The finish is acid-based, not distinctive, but with a pleasant clean sweetness molded in.

In summary: Overall, solid sauvignon blanc experience, with definite elements of friendliness, but nothing to pull it above the pack. Rates two stars on the five-star Spirit of Wine scale, with a plus for its easy accessibility. Decent value, because it comes in at an attractive price.  But, personally, I'd spend a few ($4-5) extra dollars for the Kim Crawford.

Following a five-day decant under vacuum in a partially-filled bottle:  Aroma and palate are similar.  However, the acids have tamed, allowing a nicely balanced, slightly rounded experience.  Moves to three stars, and becomes a best value.

Updated review, over a year and a half later,  October, 2011:  Color has deepened to light yellow gold.  Deeper pear and peach now on the nose.  The palate now is round and sleek, bringing mineral-slick pears brightened with pineapple juice.  Yummy.  Solid three stars, has a nice bright lift on the finish.  Following long decant, two days kept cool in partially filled bottle: Consistent aroma and palate.
