Updated Review: ***+ $$ Chikusen "Junkara" Junmai Sake, Hyogo, Japan, 2007 - GOOD VALUE

Initial review, by way of background, November, 2010: This is Chikusen "Junkara" Junmai Sake from the Tajime Co. in the Hyogo prefecture of Japan.

In the glass: Chikusen Junkara is clear to light vanilla in the glass.

On the nose: Poured cool and swirled, this junmai sake shows a rich and sweet aroma, mellow and lightly butterscotched.   

On the palate: The primary elements on the palate are a smooth and elegant mid-palate, sleek and lightly sweet in form with alcohol lifting the aromas.  Very light acids.  The finish moves from the sweetness to a crisp cleanliness. 

In summary: Overall, full, round and mellow offering. Rates three stars on the five-star Spirit of Wine scale.

Updated review, over a year later,  February, 2012:  Consistent and friendly light butterscotch.  Intriguing aromatics.  Lightly sweet with firm structured peach elements on the palate.  A plus to the three stars for this layered experience.  Good value, though not widely available.
