By way of background:   I've become increasingly impressed of late by the power of Washington reds, and their ageability. This seven year old cabernet sauvignon is vinted by Hyatt Vineyards and sold by Barclay's Wine.

Initial review :  This is , finished at 13.9% alcohol.

In the glass: Deep velvet magenta, opaque in the middle of the glass.

On the nose: Poured cool with a brief decant and swirled vigorously, shows deep, medicinal, black cherry and black currant.  From the aroma, seems like this will be deep and piercing.

On the palate: The primary element on the palate is in fact full, dry black cherry that screeches into your cheeks.  The mouthfeel is soft, but the flavors are tight, dark and entirely dry.  Tannins and acids are there, and will likely settle in around the fruit with a bit more decanting time.  The finish drips, drips, drips dry black cherry back into your palate for a full minute.

In summary: Overall, a strong experience, rating three stars on the five-star Spirit of Wine scale.  My strong sense, though, is that this wine is not yet finished because of its elements in reserve.  It may add to its star power with some air or time.

Following long decant, three hours in flat bottomed decanter at room temperature:   Less medicinal, rounder nose of black cherry.  The palate is now integrated, full, bright and deeply black fruited. Dry with prunes, but still loaded with power.

And even longer decant, full-day kept cool in partially-filled bottle: Deep, rich, black cherry aromas.  The palate has opened up now, no longer dry and tight.  The black cherry fruit has room to roam, adds a plus for the integrated nature of its power.  The longer decant has served it very well.  Somewhat surprising for a seven-year old wine.  Perhaps additional years in the bottle would work as well?
