Review: *** $ Indomita Cantus Cabernet Sauvignon, Maipo Valley, Chile, 2007 = BEST VALUE

By way of background, opening thoughts: We've sampled several Cantus wines from Chile over the years at Spirit of Wine (search "Cantus" in the search block above) and most have made the grade as best values, in part because of the remarkably attractive price point.

Original tasting and review : This is Indomita Cantus Cabernet Sauvignon, Maipo Valley, Chile, 2007, finished at 14.5% alcohol and sampled a full six years from vintage date.

In the glass: Deep, dusty red.

On the nose: Poured at room temperature and swirled vigorously, shows a bit of bold, fruit, rubber balloon surrounding a rich red, sweet raspberry.  From the aroma, seems like this wi
ll be full, sweet, layered.

On the palate: The primary elements on the palate are in fact quite round and red, a world apart from most classic cabernet sauvignons.  Soft, aromatic finish, ending big given the high alcohol level.

In summary: Overall, just touches three stars on the five-star Spirit of Wine scale, touching "best value" status.
